The Origin Beer Lab will soon be opening in downtown Ashland by the beer-brewing brothers of the community from Center of the Universe (COTU) Brewing. The new “testing facility” will be located at the former Chiffarobe Fine Antiques and Gifts store, which is currently undergoing renovations.
According to Chris Ray, one of the co-founders of COTU, the lab will enable the two brother to experiment with new brews and will not be required to have large productions of a particular beer. Approximately 30 barrels of beer each month will be brewed by the brothers.
Ray added that they will be able to try out different ideas and recipes. If they find a flavor that is particularly appealing, it will be transferred over to their larger system at Center of the Universe. However, the beers that are produced at the Origin Beer Lab will be unique to that location.
Chopper Dawson LLC of Ashland is renovating the former store. An opening date of mid-November is planned, having broken ground last month. About 50 guests will be able to be seated both inside and outside the “beer lab.”
There will be no food trucks or a kitchen at Origin, so Ashland restaurants will be partnering with the facility to provide various food options. The restaurants and Origin can work with a Print company in Ashland to collaborate on promoting each others food and beverage items.
