A regional chain of restaurants specializing in fried fish is expanding from Virginia into North Carolina in a big way, with a Durham location leading the way.
In April, the first Skrimp Shack in the Triangle area will open, blazing a trail for the several more that are in the pipeline. The Durham location, No. 12 for the chain, will join its other restaurants which are mostly centralized in the Richmond and Newport News area of Virginia.
The chain was started by Mitch Hartman and his wife Stacey in 2011. Originally a fresh fish market, their business evolved into a fried fish establishment. The fast-casual seafood eatery serves fried fish platters and fried catfish, whiting, and shrimp by the pound, along with French fries, mac and cheese, coleslaw, and green beans.
The franchisee for the Durham Skrimp Shack, Jim Moore, purchased the spot that Blue Stingray occupied until it closed in late February. The Skrimp Shack’s distinctive Logo Design will soon be a familiar sight throughout the Triangle, as Moore has plans for two other locations in this area.
In addition to Moore’s three restaurants, Tom Elwell, another franchise owner, has entered into a three-restaurant deal for locations within Raleigh’s beltline, making a planned total of six for the Triangle so far. Moreover, according to Stacy Hartman, three restaurants are planned for Charlotte.
