Jackalope, a unique and unreal dining experience will be opening in Springfield later this week.
The restaurant is owned by Andrew Brow, who said it will feature a cutting-edge and creative menu of American-style dishes that will offer some option for everyone. Brow added that diners can choose from options ranging from a burger and a beer to rack of lamb and duck.
Dishes to be served include seared duck breasts and honey lavender glazed duck with a confit. The menu also features a vegan pepper carpaccio dish made from produce grown in a garden behind the eatery. The drinks menu will have an extensive selection of wine, bourbon, and local beers. Local Print shops are often hired to create Menus and other such materials to highlight the unique offerings of an establishment.
There is also an outdoor patio at the restaurant with its own bar, tables with umbrellas, and a tarp. There will be outdoor dining in the summer and occasionally performances of live music.
The atmosphere will highlight the mythical name of the eatery with Jackalope head wall mounts, chandeliers made of antlers, and other storybook-like décor.
