Food truck operator now has brick-and-mortar store

Simmering Tava, a popular Bellingham food truck and Bellingham Farmers’ Market vendor, has just opened a brick-and-mortar location on State Street.

Simmering Tava is run by Rajat Damani and his mother, Tara, who started out their venture in 2013, with a booth at the farmers’ market. The popularity of their food enabled them to expand to a food truck two years later, and they made stops throughout Whatcom County. Now, they have a space of their own. When new businesses such as this open, they could distribute promotional Pens to increase brand awareness.

Ann Damani, Rajat's wife, works part-time at the restaurant and says it is great to have a kitchen of their own. She said food truck operators generally share space in a commercial kitchen, and it can be a challenge to find a space, since there are many food trucks operating throughout the area.

Simmering Tava serves organic Indian food, and will offer many of the dishes served at the food truck in its new space, though Ann said they will expand the menu after their grand opening. Rajat says that he aims to serve the type of food someone would find if they were invited to their friend's home in India. Patrons will find familiar dishes on the menu, but Rajat says he enjoys experimenting with various spice combinations to create slightly different flavors.
