Greenwich to be home to new farm-to-table restaurant

The Back 40 Kitchen will be opening in Greenwich this month.

The new eatery will be a modern farmhouse diner featuring a relaxed setting and serving local and seasonal organic food. The focus will be on “real food”, which means the dishes will be healthy and made with wild fish and ethically produced meats, local organic vegetables, and ancient grains. All ingredients will be sustainably sourced.

The environment will have a setting inspired by barns, as the dining room on the second floor has been completely renovated with an herb garden, a new soaring cupola, and reclaimed wood so that there is an authentic feel to the space.

According to the Back 40 Kitchen Manager, Jen Demarsico, the idea is to have a place where a full dinner can be enjoyed—or taken home—and is one that people can feel comfortable with when it comes to feeding the family.

The owners of the restaurant, Greenwich residents Lesley and Bill King, have an 85-acre farm in Washington, Connecticut, from which they will get most of the produce for the menu.

Hiring a local Print company to create Flyers with more information about the restaurant, its philosophy, and sample Menus is one way the owners can spread the word in town about the restaurant, and generate enthusiasm for it in the community.
