Winnipeg class to help store autumn's bounty
The process of fermentation can take many forms, and it has been used for centuries as a way of preserving food for future use and a Winnipeg workshop will explore a variety of different fermenting techniques.
Traditional fermentation methods will be the focus of the class, and it can be helpful to those who would like to become more self-sufficient when it comes to their food supply. It will be a hands on activity and run for about an hour and a half, and Ashley Pharazyn, who is an instructor with Traditional Wisdom Modern Kitchen, will lead the event.
The group will make both beet sauerkraut and fermented garlic carrots, and each of the participants will make their own batch. The registration fee includes the vegetables and copies of the recipes that will be used. Stationery printers can supply these, and they can laminate them so they will be kept safe and easy to clean in case of kitchen spills. The organizers have also asked that the registrants each bring their own knife, board and quart and 500ml sized mason jars with lids.
