Woodinville restaurant makes esteemed list
The American Automobile Association (AAA) recently released its list of five-diamond restaurants, and there is only one in Washington State to rank this high—and it’s in Woodinville.
In total, only 67 restaurants located in North America were placed on the list, out of almost 32,000 establishments inspected by the AAA. The organization added only three new restaurants to its latest rankings.
The single restaurant honored with five diamonds in Washington State is The Herbfarm, which was also placed on the list in 2018. The Herbfarm is a destination restaurant, a place people come specifically to enjoy fine dining, not a restaurant they go to on the way to the theater or some other activity. The Herbfarm serves nine-course meals that it pairs with wines, and it uses locally sourced ingredients, many of which it gathers from its farm or garden. It also obtains ingredients from small growers, who provides caviar, wasabi root, handmade cheese, fruits, and mushrooms. The menu for each day is completed only a few hours before the meal begins, to make certain all the items are as fresh as possible.
Michael Petrone, who is AAA’s director of inspections, as well as its diamond ratings, says that in order to be considered for the award, chefs have to develop innovative menus and concepts that use the best ingredients.
