Most people have the ability to detect sweet, salty, savory, sour and bitter flavors in what they eat. These combine to create the various tastes of food, and an Olympia workshop will be focusing on bitter.
Many foods that have a bitter taste include components that are important to a person's overall health and wellbeing. The class will explore this in depth, including how they can be used to create a variety of dishes that are as healthful as they are tasty.
The learners in ‘Bitter: The Lost Flavor’ will be guided by herbalist Martha Eden on an exploration of the benefits of bitterness. They will learn how bitter foods can play an important role in digestion, and overall vitality, and can easily be incorporated into a variety of dishes. Each of the students will prepare their own herbal salt to take home with them, and they can also sample an assortment of digestive bitters.
Olympia Food Co-Op will be offering this session in its Downtown Community Classroom, and the registration fee is $7. Providing each of the attendees with laminated cards that have been printed with recipes that make use of bitter flavors will make it easy for them to try them out at home, and these can be prepared for a class like this by local Print shops.
This class, which will explore the bitter side of life, will be held on June 23. Its scheduled start time is 1:00 pm.
