Chef Joshua Skenes will be bringing a new restaurant, Angler, to the Avenue Bellevue development in downtown Bellevue.
Chef Skenes is known for his several other restaurants, most notably Saison and Angler SF, both in San Francisco. He has received three Michelin stars for his cooking which he does entirely over an open fire and has been named as one of the 15 most influential chefs of the next decade by Elite traveler Magazine.
Scenes commented that he grew up hunting and fishing and then cooking over a campfire in the woods, so he grew up learning about eating food directly from its source and this special method of cooking. His goal is to enable his guests to have the same experiences he had by serving local products and preparing them such the natural flavors are brought out. The Pacific Northwest is an ideal environment for that type of food, he added, in that it has some of the finest natural food resources in the country.
Andy Lakha, Principal and CEO of Fortress Development, the company developing the Avenue Bellevue project, commented that as part of the project, he was looking for the best chef to head up a restaurant. The restaurant is expected to open in late 2021.
