IHOP Middletown, the IHOP that is the oldest in New England, is undergoing a major upgrade.
The restaurant will keep is A-frame design but will be renovated and expanded with the addition of 1.300 square feet. The interior will be completely remodeled. Three restrooms will be added as well as the construction of an expanded kitchen with new refrigeration and hoods, new prep and dishwashing areas, and a reconfigured line for servers.
There will be new seating as about 50 seats will be added. There will also be upgrades to the electrical and plumbing system, insultation, and the roof. The parking lot is to be resurfaced, and the landscaping will be enhanced. IHOP Middletown will now be able to expand its menu and include wine, beer, and mimosas.

The restaurant is owned and operated by Bill and Karen Cardinal. IHOP Middletown is a family business as their daughter and son-in-law, Kristin and Philip Da Costa, work at the restaurant every day and Glen, Bill’s brother, greets customers and his wife, Suzanne, often helps as well.
Bill said that the number of employees will be doubled as new jobs will also be created. The restaurant will remain open through most of the work and close for short periods of time during key phases of construction.
