Once again, a local restaurant is presenting one of its popular wine pairing dinners.
Cooper’s Hawk Winery & Restaurants in Centerville is holding a dinner inspired by the first event in the Triple Crown, the Kentucky Derby, aka “The Run for the Roses.” The featured wine of the evening is Les Petites, a velvety smooth black wine made with dark fruit.
Dinner begins with a classic beverage, Kentucky sweet tea, accompanied by a cheddar biscuit made with black pepper and drizzled with clover honey. Next comes shrimp and grits, another traditional dish. This time, the shrimp are wrapped with bacon and a BBQ glaze, and pimento cheese is in the grits. A chimichurri sauce made with sweet bell peppers finishes the dish, which is paired with a rosé wine.
The main course is a grilled pork ribeye served with spring vegetable burgoo and fingerling potatoes, and garnished with scallion oil. The wine is the Les Petites, the wine of the month.
Finally, dessert is a chocolate pecan cake served with a toffee mousse and a vanilla Anglais sauce. The accompaniment is a Bourbon Ball. There are other choices available for diners who would prefer to order a different wine or spirit.
