Mezcal Fresh Mexican Grill recently opened in Renton in the space once occupied by the NYP Bar and Grill and Limestone on Maple Valley Highway.
Owners, Francisco Lopez and his wife Monica, are looking to bring a new approach to the Mexican cuisine currently served in Renton, by offering dishes with which people may be unfamiliar and offering all healthy ingredients. Products used in the dishes are all locally sourced and come from the Pacific Northwest.
On the menu are the more traditional Mexican dishes, such as burritos and enchiladas, but Francisco will also offer specials from Michoacan, the Yucatan Peninsula, and Oaxaca. These might include more ancestral dishes, such as a Mayan pork dish, which is 1,000 years old and comes from the Oaxaca region. The drinks served also have a smoky distilled flavor that comes from agave plants.

Monica Lopez said the interior of the restaurant is different from that of many other Mexican restaurants in that there are palm trees and a fireplace and is done in gray with wood accents. There are 10 televisions throughout the restaurant for when the local teams play. There is a bar area and more family-friendly sections that serve a special menu for kids.
