A Hammond, Louisiana-based restaurant chain modeled on the build-your-own-salad concept will open a location in the Dallas area next year.
Salad Station specializes in self-serve, pay-by-the-pound, gourmet salads. Its Irving location will be the chain’s first franchise in Texas. Over 100 toppings will be available for salads and baked potatoes. Other items sold will include yams, wraps, soups, and lemonade.
Diners will be able to choose among iceberg, spinach, Romaine, spring mix, zoodles, and kale for the base of their salad, and then add whatever they wish among the selections of proteins, legumes, fruits, veggies, nuts, and toppings.

Protein selections are bacon, chicken, eggs, ham, pepperoni, shrimp, and turkey. The legume category includes garbanzo, edamame, and black beans. The usual veggies choices are on hand, such as broccoli, cucumbers, and tomatoes, plus hearts of palm, baby corn, water chestnuts, pickled okra, and marinated artichokes.
A variety of salads, including chicken and pasta salad, will be available, and a selection of fruits, nuts, and cheeses round out the list of options.
The Salad Station chain was started in 2012 by Scott Henderson and his mother and business partner Cindy Henderson. Franchising began in 2015 and spread throughout Louisiana before expanding into Alabama, Arkansas, Florida, and Mississippi. Presently, there are 26 locations in the United States; the Irving location will open in February 2022.
