A replacement for Roux Bistro, the latest business to abandon 4218 Lemmon Avenue, is already in the bull pen warming up.
Sometime in March, a breakfast-and-lunch eatery will move into the location formally occupied by Roux Bistro, which on February 28 abruptly shut down. As a note on the front door explained, Theodore Koutsogeorgas and his partners had elected to sell the business.
Soon the Lemmon Avenue spot will be the home of Eggsellent Café, a breakfast-and-lunch chain that also features salads, sandwiches, and burgers for lunch. The Café chain, which was founded in 2015, has an extensive menu of breakfast choices.
The Eggsellent Café is similar but different than the Eggsquisite Café that has locations north of the city. Businesses always aggressively advertise in the early days of their opening and advertising tools such as flyer printing are even more important when two enterprises have similar names.
During Roux’s two years at the location it served pasta, steaks and seafood with a Mediterranean and Louisiana-style preparation. Over the years restaurants have come and gone at the Lemmon Avenue address among which have been Café Cancun, Honey Shack, Catalina, Lolitas and Tallywackers.
The highly coveted location has never lacked for tenants; however, this will be the first eatery specializing in breakfast here and only time will tell if it becomes a long-term fixture in the community.
