San Diego distillery opens for business
The recent opening of a destination distillery, Cutwater, located in the Miramar area of San Diego, has started to appear on foodies' radar.
While craft breweries are found in many communities, local distilleries are still very rare. In San Diego, the numbers indicate there are nearly 150 craft brewers making their hand-crafted beers, but only 17 distilleries are hand-crafting spirits.
The company opened on May 10 in a 50,000 square-foot space that combines the distillery with a restaurant that can seat 220 patrons for lunch and dinner. The restaurant features a two-story glass structure surrounding a towering whiskey still, concrete floors, and floor-to-ceiling windows. The highly-polished wooden bar is designed as a rectangle that seats 40, where patrons can enjoy drinks featuring spirits distilled on-site.
Cutwater's spirits were once made in the Ballast Point Brewing distillery, which was located in Scripps Ranch. When Constellation Brands bought the brewery, the distillery remained independent, and some of the executives left Ballast Point to start Cutwater. Since the distillery has been in business for 10 years, it has significant resources, such as inventory it has already acquired.
The new location brings about 120 jobs with it in the distillery, restaurant, and bar. Enterprises like this can benefit by working with a printing company to create promotional drinkware to present to customers who visit in the first few weeks of operation.
