The plan is being orchestrated by Tim Sullivan, a native to Burlington and who has just returned back to live in the city with his wife and their young son. The location for the new brewery is going to be located at 700 N. Pine Street, which used to house Standard Press. Sullivan and his family purchased the building back in May. They moved back from Portland where Sullivan gained brewing experience while working with Ecliptic Brewery for four years.
Sullivan was trained at the University of California-San Diego. While learning how to brew from the University, he also worked part-time at Karl Strauss Brewing Company. When asked about the future of his brewing career, Sullivan said:
“Over the last few years, when I pictured having a place to myself, it was always going to be in Burlington. As soon as I had the confidence to open up my own spot, I couldn’t picture it any place other than Burlington. It was always my dream to come back and open something up.”
When Sullivan got back to Burlington, he started by getting the official documents in order. That meant visiting city officials and the Wisconsin Development Corporation. According to him, the local city officials are excited about the project and they are exploring the possibility of getting grants.
The brewery will come with a taproom as well. Any brochure printing for the new taproom is likely to feature an assortment of different beers in different styles.
