Japanese/Vietnamese restaurant on way to Everett

Botan Ramen n’ Bar, a Vietnamese restaurant, will have a grand opening in early November.

With ‘botan’ meaning the queen of flowers in Japanese, the restaurant serves ramen, and the owner May Vuong hopes the eatery will help fund her mother’s retirement.

Vuong was raised in Vietnam and came to the United States as a teen to study psychology at Whatcom Community College. She says that she worked in restaurants all her life and decided that she could succeed in opening one.

She had the skills for managing and marketing a restaurant. The menu was developed by her trips to Japan where she ate at ramen booths enjoying snacks, entrees, and drinks. The restaurant is busy during lunch time and on weekends.

Their happy hour is 3:00 to 6:00 pm Monday through Friday. They serve beer, wine, Saki, alcoholic drinks, soft drinks, and have a variety of appetizers available. Some are fried vegetable spring rolls, fried crab and cream cheese sticks, pork shrimp dumplings, sweet potato fries, chicken wings, and squid salad. Everett has print shops with banner printing for new restaurants like this

The grand opening will be on November 1 from 11:00 am to 11:00 pm, November 2 from 12:00 noon to 11:00 pm, and November 3 from 11:00 to 7:00 pm. There will be specials deals on food entrees and drinks. The restaurant is located at 2083 Colby Ave.
