First food hall to open in San Antonio

San Antonio’s Pearl district will be the location of the city’s first food hall, to be known as The Bottling Department.

The hall will open with five food vendors, and should be ready to welcome business in July.

First up is Bud’s Southern Rotisseries, from Chefs Susan and Pieter Sypesteyn. The duo also run NOLA Brunch & Beignets (NOLA is shorthand for New Orleans, Louisiana), where they offer typical New Orleans fare. Their new menu will offer fast-casual items like porchetta and chicken, along with Southern classics like jambalaya.

Also joining the effort is Fletcher’s, which serves American dishes like milkshakes, hot dogs, and hamburgers. Chef Quealy Watson, who comes from The Monterey and Hot Joy, is at the helm of Tenko, a fast-casual ramen restaurant that serves Japanese food with a Texas twist. Maybelle, a bakeshop, will offer fried pies, kolaches, doughnuts, and coffee. The last of the first five is a market and café named The Good Kind.

The food hall is not the same as a food court; instead, the concept offers specialty and artisanal purveyors, unusual food stalls, some upscale restaurants, and retailers. Visitors can shop at various stores, then visit various food vendors and buy an appetizer at one, an entrée at another, and so on, then get together at a communal table to enjoy the feast.

Efforts like this can benefit if managers work with a flyer printing company to create a map of the hall.
