Unique kitchen part of North Dallas' new BBQ restaurant

Blu’s Barbeque has recently opened at 17630 Preston Rd. here in Dallas, in what used to be a barber shop.

An ideal location but a little small for its intended use, the building did not have enough room for both a kitchen and dining room. The problem was solved by attaching a cargo shipping container to the building for use as a kitchen. This enabled seating for 48 in the original part of the building.

Co-owners Terrance Hill and Zachary Bergenbholtz have operated a catering business for the past few years before deciding to open their own restaurant. However, Hill and Bergenbholtz will continue to cater for pick-up or delivery as well as on-site, full service events for as few as a dozen and up to 1,000 people.

The partners, both of whom are pit masters, co-manage their establishment. A custom-built smoker with a capacity of 1,600lb of meat is used for their Angus beef brisket, pork spare ribs, and pulled pork.

The usual barbeque side dishes are available here, such as potato salad, coleslaw, smoked baked beans, and a five-cheese mac and cheese. Blu’s Barbeque has purposely kept its opening menu modest in size but will add items such as tacos, beer, and wine as it grows.
