The famous steak chain Knife is scheduled to open in April at the Shops at Willow Bend in Plano, only seven miles from Allen. This concept was created by award winning chef John Tesar.
Tesar builds relationships with local ranchers and farmers to provide the locally sourced meat and fresh produce in the region at his restaurants. Measuring 7,000 square feet in size, the diner will have a butcher shop that dry ages the meats and cooks them over a wood fired grill. The restaurant will have cuts of meat aged for 45, 60, 90, 120, 150, and 240 days available.
The butcher shop will sell customers steaks to grill at home. Its regular menu has grilled steaks, short ribs, pork, sausage, and chicken.
Knife will serve fresh seafood too. The restaurant will have a raw bar, caviar, oysters, king crab, shellfish, and freshly grilled fish on the menu.
The bar in the center of the restaurant will seat about 25 people. It serves 300 types of wine, local and craft beers, and cocktails.
Chef Tesar wanted to reach customers who do want to travel the busy Dallas North Tollway, which is why he settled on the Shops at Willow Bend as his location.
