Oregon Historical Society plaza to gain food cart

Greg Higgins anticipates adding a new position to his resumé, that of food cart owner, with the opening of Piggins in the Oregon Historical Society plaza.

Higgins, like many Portland restaurant and bar owners, is looking for a way to expand seating outdoors. His wife suggested going to Kerry Tymchuk, and executive of the Oregon Historical Society with a proposal. As a result, the new cart owner will be setting up his cedar-paneled cart outside the Oregon Historical Society, which is currently closed.

PDX Cart Builders is building the $50,000 cart, which will serve house charcuterie boards, farm salads and sandwiches during the day, with a more upscale menu of an evening, such as a Northwest seafood special per night, and grilled hanger steak accompanied by fingerling potatoes.

Greg Higgins owns “Higgins,” a well-known restaurant just around the corner, and it is there that prep work will be done for the food cart. The new fast-tracked process enacted by the Oregon Liquor Control Commission, which facilitates expanding alcohol service areas, may make it possible for Piggins' patio to incorporate cocktails, wine, and beer to its menu.

The cart delivery date is scheduled for Monday, June 15, although Piggins is not set to open until July 1, which means a few “practice runs may be possible” over the next couple of weeks.
