Cully neighborhood to site newest Nico venture
Nico’s Ice Cream founder Nico Vergara has plans to open another enterprise in Portland, one with a traditional Mexican flair.
Vergara new venture, Nico’s Cantina will use the traditional barrooms of Mexico as its inspiration and will be located at 4618 NE Cully Blvd., the site previously occupied by Dick’s Primal Burger. Just a 10-minute stroll from his New Zealand-style ice cream shop’s location the Cantina will offer plenty of Mexican atmosphere.
Like the old Mexican barrooms, will serve complimentary snacks referred to as botanas. As he has limited food experience, having only run an ice cream shop, the chef and owner of Miss Delta, Marcus Oliver, is helping Vergara put together the Cantina’s menu and its recipes.
The same banner printing service that contributes to the festive atmosphere of a grand opening can also ensure a restaurant menu will contribute to its overall ambience.
Nico’s Cantina will be serving a minimum of four draft beers all from Xicha Brewing as well as the obligatory tequila and mezcal. In time, six-packs of a custom collaborative brew will available for purchase.
Once the site opens, it will feature a long bar on the inside with seating for around 50 patrons as well as TV screens for watching soccer matches. Outside, a patio with string lights will hold approximately 25 to 30 tables.
