Salem food cart owner to open Portland restaurant

Ryan Callahan, a successful food cart owner in Salem, who specializes in traditional made-from-scratch ramen dishes, is preparing to open a brick-and-mortar location from which to serve his noodles here in Portland.

Callahan had hoped to open a restaurant in Salem, but when an opportunity for a Portland location presented itself, he said, “it was too good to pass up.” His new establishment will open sometime in August and will be called Menya Hokusei, which means “northwest noodle house.”

Banner printing services are frequently sought out a few weeks prior to the opening of new establishments for early promotion.

Menya Hokusei, according to Callahan will be a noodle shop that will primarily use local ingredients as well as Japanese ones. He is particularly excited about the opportunity to use Oregon truffles, in both their raw form as well their oil. The new restaurant will feature a number of appetizers as well as chicken karaage and fried gyoza, his signature dish, and other specials.

Salem residents will be happy to know that Callahan is not completely abandoning them. Wishing to maintain a connection with the city that contributed to his success, he will maintain a presence at The Yard food park. However, his cart will no longer be Oni Yatai Ramen, but instead will be renamed Yakiniku Gohan, or “barbecue rice.’ The truck will serve bowls of rice with barbecued meats and toppings such as vegetables and fresh pickles.
