Several months after closing in Fairport, Compane Trattoria has reopened in the former cannery in Fairport in time for the new year.
Chef Brendon Clar, owner and executive chef, says it has been challenging and risky opening a new restaurant, but exciting too. It also took longer than expected due to restrictions.
The restaurant is 5,700 square feet and seats 200 customers. The bar in the center of the restaurant is twice the size it was in the old restaurant, which was called Compane Brick Oven Bistro.
Chef Char has added an air filtration system and has spaced tables far enough apart to make social distancing possible. It has a comfortable dining area with wooden tables and upholstered chairs, and booths.
A brick wood-fired pizza oven was built to cook pizzas for customers. Chef Clar says the menu is seasonal and he makes bread and pasta in house daily from scratch. The menu has salads and appetizers, while pasta dishes include lobster spaghetti, four-cheese ravioli, and toasted gnocchi.
Some of the main entrees on the menu are chicken, veal, or eggplant parmesan or Milanese, and braised pork. The bar serves soft drinks, white and red wine by the glass, and cocktails.
The restaurant is open for dinner only, but has takeout and delivery too. Printers provide Logo Design for new and relaunched businesses like this.
Open Tuesday through Thursday 5:00 to 9:00 pm, and Friday and Saturday 5:00 to 10:00 pm, the eatery is located at 25 Parce Avenue, and reservations can be made online or over the phone.
