A new opened in Edwardsville shortly before the holiday weekend, and is hoping to become the city's go-to source for quality cuts of meat, according to an article in the Edwardsville Intelligencer.
Bagley Farms Meat Market has gone into the premises formerly occupied by Hansen Meat Company. Andrew Bagley, the owner, said the company is community oriented, and hopes to keep its offerings local. However, at the present time, they are sourcing meat from throughout the region, because there is no processor in the local area that can handle the demand for the meat.
Although Bagley would prefer to source all the meat from Bagley Farms, it's not possible to do so. Bagley said too much meat would go to waste, and that goes against the reasons why he got into the industry.
Bagley said that the first few days were not very busy, but business picked up around the 4th of July holiday, when new customers came to see what the market had in stock. As the moment, the market is selling only select cuts of meat. Bagley said he wants to see what meats and cuts customers want before he starts ordering products that might not sell. However, Bagley does want to introduce fresh produce as soon as he can, as well as equipment and all the fixings for barbecue.
