Mexican eatery on its way to Sandy Springs

Huey Luey’s, a popular Mexican restaurant, is opening a location in Sandy Springs.

Known for fusing traditional Mexican dishes with American cuisine to represent both cultures, its menu includes favorites such as nachos, fajitas, burritos, and tacos, but also features American twists like tacos made with brisket cooked Southern BBQ style, and grilled hot wings.

Jason Salisbury, who is the general manager of the Sandy Springs location, says the chain encourages its cooks to experiment with new dishes and new flavors, and this is an approach that has proven popular with customers. Everything is made in-house, using only fresh ingredients. There are no ingredients from frozen packages or cans, and recipes come from all parts of the United States and Mexico, brought by chefs who recreate the foods of their hometowns for customers at the restaurant.

Also popular are the venues the company chooses. There are two other Huey Luey’s, one in Hiram and the other in Acworth, both of which are in former big-box retail stores. The Sandy Springs restaurant is taking over a former Staples store.

The opening date is October 3, and the new eatery is on Roswell Road. A grand opening is scheduled for October 20. New restaurants like this one can benefit by creating Banners to display when they open their doors.
