Take-out eatery in Tacoma to move into brick-and-mortar establishment

Buddy’s Chicken and Waffles will be establishing a brick-and-mortar restaurant in Tacoma.

Buddy’s will be moving into what was Thurm’s Soul Food in the Lincoln District, which closed after 16 years in 2021.

The simple menu of Buddy’s Chicken and Waffles features hand-dredged buttermilk fried chicken served over waffles of different flavors, such as Southern cornbread, strawberry shortcake, and cinnamon toast crunch. Food is ordered and paid for online and picked up at the business, where the eponymous Buddy Brown or his niece would emerge with a bag of takeout food.

When it was suggested to Buddy that he look at the space of Uncle Thurm’s, he hesitated at the price until another business became interested in the site. Buddy and the owner of the building then negotiated on a price and so a lease was signed.

The former restaurant spans 3,400 square feet and already can accommodate a fryer, and is much larger than Buddy’s current location. Buddy has been running a Kickstarter campaign to help with the purchasing of permits and equipment. Such campaigns can be promoted throughout a city and an area with flyer printing.

Buddy plans to continue cooking at his kitchen in Edison Square in South Tacoma until his lease expires at the end of August. He will soon thereafter open his full-service restaurant on South G Street.
