According to Charlie Green, owner of Olivella’s, the newest location will open this spring in the space formerly occupied by Hide, a bar at 2816 Elm Street. Green told Culturemap Dallas:
"We'd like to be open by April. It's a second-generation space with a good layout, and what we're doing is mostly cosmetic, so I'm feeling as optimistic as you can right now."

Green, who is part of one of the oldest Naples, Italy pizza families opened the first Olivella’s in University Park in 2007. His authentic recipes and delicious pizzas have made each of his locations a success.
Green cleverly bolstered the appeal of his first three locations, by expanding them to include an adjoining wine shop where patrons can purchase bottles of wine.
While it is unclear whether the Deep Ellum location will in time have an Olivella wine shop next door, the newest location will have one unique element, a full bar that includes specialty cocktails. The other locations serve only wine and beer.
Neapolitan pizza is what Olivella’s specializes paired with a Roman-Northern Italian-style crust described by Green as among the country’s thinnest pizzas.
