Holiday cooking class to be held at local college

The Food Enthusiast Program of the Hospitality & Culinary Arts Center of Rockland Community College located in Nyack will be holding a special class for holiday cooking. Residents of Nanuet will want to make sure they attend this class.

The class is on holiday appetizers and sides. There will be several different and tasty dishes made from turnips, pears, apples, and more from the Hudson River Valley. The dishes will include roasted baby turnips with tops, zucchini roulades with ricotta tomatoes and basil, a corn fritter casserole, and shaved apple and pear salad with pickled red onions, arugula, and white balsamic vinaigrette. Billy Strynkowski, the Director of Wellness for Restaurant Associates, will be teaching the class.

Such a class for the community is in addition to those it holds for matriculating students. Director of the Center, Mark Davidoff, said that professional chef instructors enable participants to gain the confidence and abilities to cook like a chef in a fund, hands-on cooking experience. There are 10 workstations in the classroom kitchen and state-of-the-art equipment, as well as a teaching station with video and audio technology, which enables students to see the exact steps in the culinary process.

The class will be held on Thursday, December 5 from 6:30 to 9:00 pm.
