After five years in business, Caputo Brother's Creamery took home a blue ribbon for their ricotta cheese during the 2016 PA Farm Show and has seen its cheeses on the Menus of a variety of high-end restaurants up and down the east coast.
The attention has meant that the Hanover company has been able to expand in recent months. At the start of May, it switched from producing cheese using just a single 375 gallon kettle in a creamery in East Berlin, to a larger production facility in Spring Grove. Now, the cheesemakers have access to eight 125 gallon kettles.
Before, the company could produce 1,500lb of cheese each week. The larger production facility can allow them to make up to 30,000lb, although their current goal is much smaller at just 3,500lb of cheese weekly.
The company has also been able to expand the size of its own restaurant, La Tavola, which is located in the same spot as the new cheesemaking facility. Currently, La Tavola is open on Wednesdays and every other weekend, but the goal is to increase the hours of the restaurant. When that happens, the company can use poster printing to let patrons know of the new operating hours.
Along with expanding the hours and menu options, the owners plan on operating a small retail outlet, which will sell their cheeses, in the same space.
