New eatery Pop Pizza to merge Detroit and Rome-style pizza

Marius Pop, owner of Nuvrei bakery and macaron bar, will be fashioning a different kind of dough on the east side of Portland with the opening of a new pizzeria called Pop Pizza.

Set to open next year, the new pizza parlor will be located at Sixth Avenue and Southeast Morrison Street. It will feature a blending of the Detroit and Roman style pizzas. Behind glass in the style of a Roman al taglio establishment, Pop’s Pizza will display Detroit-style pan pizzas.

Brand new food establishments that are not part of a chain have to come up with a suitable Logo Design and many seek out a banner printing service to announce their opening.

The inspiration for the new pizzeria came from a pizza research trip that Pop and Johan Arlig, his business partner, made. They were impressed with the famed Roman Bonci Pizzarium Chicago location’s long, rectangular pies with their wonderful flavor and airy dough.

Pop and Arlig chose not to incorporate Bonci Pizzarium signature scissor-sliced-to-order method in their new venture, deeming it too slow. Instead, Pop Pizza will have pan pizzas pre-cut with a variety of toppings. The partners’ goal is to create comfort food in the tradition of the classic Detroit pizzerias.

Quoted on the Oregonian website, Pop said:

"The biggest thing about Roman-style that I loved was the idea that a group of friends can get together and all share different slices, just like sharing a box of macarons.”
