Westerville welcomes new Mexican restaurant
A restaurant that serves authentic Mexican food will be opening soon in the Polaris corridor in Westerville.
The eatery is called Vaqueiros: Real Mexican Street Food, and was created by the same team that founded the El Vaquero chain, which has locations in Ohio and Michigan. El Vaquero restaurants offer full-service Mexican meals with traditional fare such as seafood, fajitas, tacos, burritos, and combination plates.
The Vaqueiros (the name is a variation of the Spanish word for “cowboy”) fast-food restaurant offers a much more limited menu, but allows patrons to build their own quesadillas, burritos, tacos, and rice bowls. They will be able to select from a number of fresh ingredients to create their dishes.
Among the items that will be on the menu are al pastor pork roasted on a spit, and a dish called “cochinita pibil”, consisting of seasoned pork slow roasted inside a banana leaf.
The Polaris Parkway Corridor where the new store will open is one of the key developments in Westerville. The parkway carries a heavy traffic load, and also provides indirect access to areas of nonresidential development. Officials believe it will one day become north Westerville’s most intense corridor.
