Lewis Center has a new eatery

A new independent restaurant is now open in Lewis Center—Iguanas Fresh Mexican Grill has moved into the space formerly occupied by Kohinoor Indian Cuisine.

Owners Abigail and Omar Garcia, and Joel Aguirre, are serving 92 patrons in a region of the city where most of the other restaurants are franchises.

Iguanas puts its emphasis on creating made-to-order meals quickly, using fresh ingredients. Since this is their philosophy, the spot has just a small freezer and no microwaves. Mexican cuisine of all sorts is featured on the menu, with dishes including burritos, quesadillas, tacos, fajitas, chimichangas, enchiladas, and several types of tortas. Tortas are a type of Mexican sandwich, and Iguanas is making theirs with local fresh bread, and filling them with the customer's choice of seafood, chicken, carne asada, or a combination of eggs and beef known as machaca.

One of the favorite dishes is elote – fresh corn that is steamed and then coated with cotija cheese. Most of the dishes on the menu are mild, but there are spicier options available. Iguanas' signature dish is fish tacos—the tilapia is marinated in beer, fried without breading, then topped with pico de gallo and red cabbage, after which a “secret sauce” is drizzled over them.
