A local food truck operator is ready to make the move to more permanent surroundings.
Emily Frank owns and operates the C'est Cheese food truck, and has been doing so for more than three years. She began selling gourmet grilled cheese items from her truck in 2011, and now wants to expand her presence.
To that end, Frank is opening a new restaurant in the Pleasant Ridge area of Cincinnati, where she will locate next to Nine Giant Brewing and other businesses in the Sixty99 development on Ridge Road.
Frank says that although she can't imagine not running the food truck, the market has changed dramatically, causing her to consider her options. When she opened C'est Cheese, there were 10 trucks operating, but now there are over 60. Since she only runs the truck eight months of the year, she needed another opportunity.
That has proven to be a cheese shop she is calling Share Cheesebar. The establishment, which comprises about 1,000 square feet, will seat 30-40 people who can enjoy cheese and charcuterie plates that Frank plans to pair with craft beer and wine. Share Cheesebar will offer a rotating selection of around 20 cheeses for people to purchase, along with fresh bread.
Frank might consider working with a banner printing company to create a festive banner to hang above the entrance to celebrate the opening.
