New eatery to open in Saco
Finestkind is a new restaurant in Saco that is currently under construction.
Finestkind is being launched by Tom and Victoria Barthelmes along with their business partners Paige and Chris Gould. It will be in the building once occupied by The New Moon on Pepperal Square. Banner printing is often used at such sites to announce the opening of such new establishments.
The restaurant will have 26 seats at the counter and serve breakfast and lunch. There will also be outdoor seating. There will be an assortment of egg sandwiches on the breakfast menu while the lunch menu will include soups, salads, sandwiches, and macaroni and cheese. Beverages served will be wine, beer, cocktails, and non-alcoholic beverages as well as a full coffee program. An in-house bakery is planned that will feature cookies and other sweet treats. All menu items will be available for online ordering for takeout.
The Barthelmes said that Finestkind is a culmination of their experience in life and work. It will be a combination of the techniques they developed while cooking in New York with the relationships they made in Maine since they moved to the state nine years ago. They met the Goulds when attending The Culinary Institute of America in Hyde Park, New York and worked together at a bakery in Hyde Park.
Finestkind is expected to open this summer. Its hours will be 7:30 a.m. to 2:00 p.m., Thursday through Monday.
