Many of the first settlers in the area came from Missouri, where rain provided the water needed to grow crops. In the drier West, however, irrigation systems were needed, since access to water was required if a person wanted to receive a patent for land from the U.S. Land Office. The irrigation districts created in the 1800s are still in operation today.
By the early 1900s, the Meridian area boasted fruit orchards that produced a variety of apples and prunes. In 1897, a creamery was built, and soon, other businesses related to the dairy field followed, making Meridian a center for dairy products in Idaho. Meridian still celebrates Dairy Days every June, a festival that has been ongoing since 1929.
