Strong start sees restaurateurs ponder expansion

Roll On In, a sushi restaurant that opened in Lebanon in June, has given customers a different approach to sushi, and been so successful owners John Kallenberger and Michael McCarthy are considering opening more locations.

The restaurant’s most popular item is a sushi burrito—literally sushi wrapped in a burrito—and there are a number of options available. Customer can add green onions, edamame, fried wontons, and corn salsa if they choose. Sushi is also offered in salads and bowls, and customers can order extras such as tempura shrimp and chili gyros.

Roll On In also offers a cold-brewed coffee known as Smooth Cincy Coffee, a local brew that is infused with nitrogen. According to McCarthy, the coffee and sushi go together well.

Kallenberger and McCarthy are considering opening a second location in Cincinnati, and a third in Dayton, though they intend to expand into Cincinnati first. He notes that customers are enjoying coming to the restaurant and creating their own dishes. The two are also planning to operate a food truck, which they will bring to local events and breweries.

McCarthy studied art, and has also worked as a chef. The restaurant allows him to combine his two passions.
