Locals will soon be able to boast that their city has its own brewery, when the Canton Brewing Company opens later this year.
The facilities will be set up by David Sutula, who has confirmed that he hopes to have the new enterprise open by December 13, 2014. Sutula has been working in the industry for years, including a stint in Ireland, and is the author of a book about ale. He left the industry for a while but when he met David Beule, who was discussing the possibility of opening a brewery in Canton, he realized he wanted to brew again.
Canton Brewing will be both a working brewery and a restaurant, housed in 20,000 square feet at 120 Third Street NW. The operation will take up two floors, with a brewhouse on the first floor where visitors can see it as they enter. Also on that floor will be the kitchen, dining room, and bar, plus an outdoor patio. The building is made of brick, and its walls will be left exposed. The basement has high ceilings and will become a rathskeller (a cellar that acts as a bar), as well as featuring a barrel-aging room, fermenters, and a private dining space.
The brewers could work with a flyer printing company to create handouts to be distributed the day of the opening, perhaps including a coupon to bring in patrons.
