Popular St. Louis eatery expands and plans new dishes

The Corner Cup opened in the Dogtown area of St. Louis in January, and now Ben Strake, who is a co-owner, plans to take things to the next level.

He has just brought in Chef Bob Brazell as a consultant, with the idea that Chef Brazell will revamp the menu each quarter.

Brazell comes to the Corner Cup from Athletic Eats, which was founded by Simon Luskey, who started in St. Louis as a nutritionist and chef for the St. Louis Cardinals. Luskey's focus is on whole foods that are paleo-friendly, gluten-free, and natural.

Brazell has brought Luskey's ideas with him, and Strake notes that the Corner Cup follows those same guidelines. The restaurant offers a wide variety of meals, including vegetarian dishes, gluten-free meals, and the paleo diet.

Strake adds that when the Corner Cup opened, he was sure they wanted to serve health-conscious meals, but did not have anyone to help them fulfill the concept. When Strake realized Brazell had left Luskey's restaurant, he swooped in and grabbed him.

Corner Cup has also made another recent change; it delivers breakfasts of fruit, pastries, and coffee to offices. Strake and his co-owners could work with a flyer printing company to create handouts, complete with coupons, for distribution outside the Corner Cup for each menu change.
