Bethesda has a new fast-casual Italian restaurant

Foodies weren't the only ones happy to see Gusto Italian Grill open in Bethesda on October 22, 2015.

According to a news item of that date, the restaurant planned to donate all of its proceeds from opening day to Walt Whitman, Bethesda-Chevy Chase, and Walter Johnson High Schools. To make the grill as successful as possible, management of the new location could have a flyer printing company design a handout, including a coupon, to be distributed for a few days, inviting passers-by to stop in.

The key concept of Gusto is a menu where guests choose the ingredients and build their own dishes. They first choose the base of the dish, either a salad bowl, pasta bowl, or piadina, which is an Italian flatbread. They then choose a filling, which include Italian pulled pork, turkey meatball, meatball, marinated steak, or grilled chicken. Then they add a starch, such as white beans or pasta, and top it off with veggies that come fresh from the farm, and put an Italian sauce on top.

The idea of using locally sourced, farm-to-table ingredients which customers choose themselves sets Gusto apart from other restaurants. It also differs by offering seating around a “tavola,” a communal table where both friends and strangers sit to enjoy their meals. The restaurant's décor is described as an “urban Italian farmhouse,” and is warm and welcoming.
