Winston, a café that aims to present both warm drinks and gourmet, cutting-edge food, recently opened in North Vancouver.
The restaurant is a new project from the owners of Vancouver independent café Koffie. It aims to offer elevated versions of coffee house staples like sandwiches, bowls, baked goods, and the ever-popular avocado toast.
Winston particularly looks to attract brunch-goers, offering a full menu, including dishes such as mushroom and cheddar brioche sandwiches, mushroom and kale frittatas, and buckwheat buttermilk pancakes. Another key market could be foodies looking for a snack or tea after a visit to nearby favourites like Lonsdale Quay Market or Buddha-Full.
The café business in the Vancouver area is highly competitive. This winter, the North Shore alone has seen new additions like Kokomo, Nook and Nemesis in the Polygon Gallery. Koffie has marketed itself as different from its peers through its use of curated blends from artisanal roasters and a handcrafted Italian espresso machine.
