The Holy Basil Thai restaurant in Croydon is offering curry aficionados the opportunity to learn the secrets of creating Thai curry pastes from fresh ingredients.
Holy Basil owners, Duncan and Julia, combine Julia’s knowledge and appreciation of traditional recipes and authentic flavours from her upbringing in a Thai village, with Duncan’s flair as a renowned chef who loves to teach and share his knowledge with others.
At the four-hour long, hands-on cooking class, participants will learn how to pound and blend ingredients to make curry pastes from different parts of Thailand, including Masaman curry paste, green curry paste and red curry paste.
The food that class members prepare, which will include Masaman prawn, Choo Chee Mussells and green curry vegetarian, can be taken home and shared with friends and family. Participants will also receive recipe cards so they will be able to reproduce the food on subsequent occasions, and a DVD of Duncan’s Thai Kitchen show which includes over 40 recipes.

The class will run on 10th September from 10am to 2pm at the Holy Basil Thai restaurant, 1/66 Maroondah Highway in Croydon. The cost of the class is $160 per person and bookings can be made online.
