Local pizzeria wins TV cash prize

The proprietor of Taglio, Long Island's inaugural Roman-style pizzeria located at 85 Mineola Boulevard near Williston Park, has won a prize of $10,000 after featuring on TV.

The award came on a recent pizza-themed episode of Food Network's "Chopped." Rob Cervoni, originally from Great Neck but now residing in Franklin Square, outperformed three other pizza chefs on the show and claimed the top prize. He intends to establish a scholarship fund for aspiring pizza makers (known as pizzaiolos) using the winnings.

When speaking to the TheIsland360.com, Cervoni stated:

“There’s been a massive boom in business. We had on Friday night a three-hour wait for pizza. The entire community of Long Island has really come out, shown their support and welcomed me with open arms.”

The trend of pizza al taglio, or pizza "by the cut," has been growing in popularity throughout the country. This style of pizza is recognized for its light and airy dough, which is typically cut with scissors instead of a traditional pizza cutter. The dough's texture can be credited to its high hydration and a fermentation process lasting at least 72 hours. Printing services could be used to make Menus for restaurants, displaying any awards and accolades.

After operating a 16 Handles frozen yogurt franchise for eight years, Cervoni, who graduated from Great Neck South High School in 2006, ventured into the pizza industry. His inspiration came from his travels to Rome and his grandfather's birthplace in Boville Ernica, located in the Frosinone province. Taglio, a Roman-style pizzeria, was founded in 2018.
