Fred and Ricky's, a “grab-and-go” establishment featuring vegetarian entrees, will soon be open in Maryland Heights, an inner St. Louis suburb.
The Fred and Ricky of the title are Kathleen Waidmann and her husband Rich, whose nickname for his wife is Fred.
The difference between Fred and Ricky's and other grab-and-go eateries is that this one is completely plant-based. The large kitchen in the Maryland Heights spot is where the two will make the food to furnish all the locations.
The Waidmanns began to explore healthier eating due to Rich Waidmann's family history of heart problems. When he began exhibiting Signs of the disease, his doctor prescribed medicine, but he decided to try modifying his diet instead. Using an oil-free, plant-based diet, Rich lowered his cholesterol by over 100 points in a single month, and told Kathleen about his experience.
She decided to put together a picnic for him made of fresh foods, and that picnic became the basis for their devotion to fresh, healthy foods. Kathleen admits that it can take time to prepare fresh food, so their grab-and-go shops will do that for their customers. Their dishes include offerings like vegan lasagne, and broccoli and potato soup.
Fred and Ricky's is aiming for an April 8 opening, and could create colorful Banners to hang near the location to celebrate the occasion.
