Frederick gets Mediterranean flavor

The Francis Scott Key Mall in Frederick has a new neighbor—a Mediterranean restaurant is now open near the mall.

CAVA, which is based in Washington, D.C., is a fast-casual establishment. Its signature dishes include cauliflower quinoa tabbouleh, and spicy lamb meatballs, but it is also creating specials for the warmer months, including a lime tahini dressing with some heat, lentil soup, and a roasted vegetable medley.

The new eatery is 2,166 feet square, and has seating for 36 patrons in-house. It also features an outdoor patio, and inside, those who place their orders online will have a designated zone to pick up their food.

In addition, the Frederick location is one of the earliest to start using CAVA's Pickup by Car system. To use the new model, customers place their order online, or via the CAVA app, and then use the drive-thru to pick up their meal.

City Blossoms, a Washington organization that encourages the growth of healthy communities by creating green spaces that are kid-friendly and creative, benefited at the opening, since the restaurant donated part of its proceeds for opening day to the group.

CAVA was started by three friends, including a chef, who all come from Greek families who love good food. With backing from family and friends, the trio opened their first restaurant in Rockville, Maryland. They have been so successful there are now almost 80 spots in the chain.
