A retail bakery is planned for downtown Indianapolis, but the establishment will also feature a chef's table, according to an article in the Indy Star.
Croute Baking Company is an effort from the Cunningham Restaurant Group, which already operates some of the city's best eateries. Croute will be in the hands of Hattie McDaniel, a talented pastry chef whose magic in the kitchen earned Vida, another Cunningham spot, a four-diamond ranking from the American Automobile Association. When new companies like this open, they can use Promotional Products to build brand recognition.
McDaniel's creations are inspired by the Midwest, leading her to come up with dishes like the Ode to Arby's, a turnover filled with cream and cherries, with an anise glaze, and a pistachio semi-freddo, which is a partially frozen creamy dessert. She has also created her own signature dishes, such as a truffle raspberry “bomb” covered with chocolate, served with a cognac cream and sprinkled with chocolate Pop Rocks.
Such creations are not the only items available. Croute offers simple baked goods, as well as snacks and sandwiches that patrons can “grab and go”. However, the retail side of the bakery won't be very large, doesn't serve beverages, and has no seating. In the kitchen, though, a cherry-wood table that seats ten will be the site of special multi-course meals. These events will be by appointment only, and participants will cook along with the chef.
