Clovis wine lovers may wish to make their reservations now for an evening that will celebrate the products of one of California’s vineyards.
Trelio Restaurant will be offering a specially planned dinner with wines that were carefully chosen to pair with the dishes served in each course. Trey Fletcher, who is a winemaker with many years of experience, will be pouring vintages from Bien Nacido Estates, and the menu was prepared by Chris Shackleford.
The dishes that will be presented to each of the patrons during the evening’s activities include lobster chitarra carbonara and shaved lardo (cold pork cuts) over pea tendrils, which will be followed by the guest’s choice of grilled wild king salmon, as well as roasted beets accompanied by horseradish crème fraiche and roasted herbs, hot smoked Japanese eggplant with cherry tomatoes and fennel anchovy relish, and crumble Humboldt fog or a koji aged ribeye with parmesan potatoes and green peppercorn gravy.
The meal will be topped off with a trio of springtime-inspired sorbets, and each course will include a specially selected wine pairing.
