Southern Ontario food and environmental event Regenerate will be holding an unusual weekend seminar in London this September.
“Bread Camp” does exactly what it suggests, helping bakers and chefs to hone their skills and learn about how to incorporate more sustainable practices into their work.
With an increased interest in local food and produce, consumers and chefs alike are fuelling a rising demand for local grains. The seminar is meant to help address this desire, teaching about different types of grains and how to collaborate with local farmers and growers. It will be led by Greg Wade, the head of Publican Quality Bread and winner of the James Beard Award for Outstanding Baker. Attendees will take home a baking book composed by Wade with thirteen bread recipes to use and customize.
The event is part of the larger Regenerate weekend that focuses on grain. It will include a rotational dinner, a group of workshops on how to incorporate local grains into the kitchen, a fall food festival, a documentary premiere, and a local craft beer festival. Food events like this, which often use tools like poster printing and flyer printing to get the word out, are a crucial part of the emerging culture that focuses on local foods and craft goods.
Regenerate’s Bread Camp will be held on September 28th and 29th at London’s Growing Chefs Headquarters.
