A workshop to explore the techniques used to craft sausage in the home kitchen will share tips and tricks for making tasty salami, and it will be offered near Wauwatosa this fall.
Ryan Wagner, who is an expert sausage-maker and owner of Driftless Provisions, will be walking a group of learners through the steps of making dry cured salami. They will be invited to roll up their sleeves and join in, and each of the students will end up with about two pounds of sausage to enjoy at home.
The students in the class will go through all of the steps needed to make salami, and when the lesson is over, the instructor will take the sausages through the final steps of drying and fermenting the finished product. There is room in the workshops for up to 10 learners, and refreshments will be served.
This type of activity can appeal to a wide range of people, and the organizers noted that each of the students in the activity will receive printed recipes and instructions so they can make salami any time they wish. Items like this can be sourced from area Stationery printers.
Kettle Range Meat Company has made arrangements to host this sausage making session on September 21. Tickets to be part of the activity are on offer for $75 each.
