Carrie and Bob Stahl have been serving Wisconsin-style BBQ at catered events for the past four years through their business ZoZo’s Kitchen, but they now anticipate opening a ZZQ restaurant location by the end of November.
The business will be located at 1035 Vanderbraak Street in Green Bay, where the Fraternal Order of Eagles has been for many years.
ZZQ purchased the business and is renovating the dining room, bar, and kitchen areas. It is likely that the event space will stay open, but plans have not been finalized. Bob Stahl says that he and Carrie decided to move forward when they saw the building. He believes that the big grills and rising smoke will bring in visitors, showing them that the building is coming back to life.
According to the Stahls, Wisconsin barbeque does not involve cheese, as some fans might assume. Instead, Stahl focuses on his rub, rather than a sauce. He says the flavor is tangy, without being the same kind of tangy that involves mustard, which he calls a ‘Carolina flavor’. The rub is also a little sweet, and focuses on the kind of spices that honor his Eastern European and Czech heritage.
